Yum Woon Sen (Glass Noodle Salad with Seafood)

Ingredients:

● 8 oz glass noodles

● 1/2-pound shrimp, peeled and deveined

● 1/2-pound squid, cleaned and sliced

● 1/2 cup cherry tomatoes, halved

● 1/4 cup sliced red onion

● 1/4 cup chopped green onions

● 1/4 cup chopped cilantro

● 3 tablespoons fish sauce

● 3 tablespoons lime juice

● 1 tablespoon sugar

● 1 tablespoon chili paste

● 1 tablespoon roasted peanuts, chopped

Preparation:

Cook the glass noodles according to package instructions. Drain and set aside.

In a bowl, mix together shrimp, squid, cherry tomatoes, red onion, green onions, and cilantro.

In a small bowl, mix together fish sauce, lime juice, sugar, and chili paste. Pour over the seafood and vegetables mixture.

Add in the cooked glass noodles and gently mix everything together until well combined.

Transfer to a serving plate and sprinkle with chopped roasted peanuts. Serve immediately.
